Raspberry maple muffins

Gorgeous freshly baked muffins flavoured with fresh rapsberries and sweetened with maple syrup

These were a little experiment as I really fancied something freshly baked but not unhealthy. These muffins have a bran flake base, so they are full of fibre, the raspberries give them a gorgeous flavour and the maple syrup and orange juice sweetens them up perfectly without making them oversweet.

 

My Recipe

Serves: 6
Syns: 3 (per muffin)

Ingredients

  • 25g bran flakes
  • 50g self-raising flour
  • 2 tsp baking powder
  • 50ml freshly squeezed orange juice
  • 2 tbsp maple syrup
  • 2 eggs
  • 50g fresh or frozen raspberries

Method

  1. Preheat oven to 180c
  2. Using a food processor, whizz up the bran flakes until finely chopped
  3. Add in the flour and baking powder and whizz up again
  4. Add in the egg, orange juice, and maple syrup and blend everything together
  5. Add in the rapberries and give them a quick pulse (you don't want to puree them, just break them up)
  6. Bake at 180c for 15-20 minutes (check them at 15)

Additional Info

I recommend spraying your muffin cases with a low calorie cooking spray to avoid these sticking- silicone cases would work best if you have them
