HEALTHY DELICIOUS PANCAKES
I was a little cynical about the use of cottage cheese in a pancake- I wouldn’t normally touch cottage cheese with a bargepole! But these pancakes really do taste good, and are full of goodness! This is a great way to make healthy pancakes without using flour, the oats work perfectly.
Try these served with my homemade lemon and blueberry sauce, or simply fresh berries and maple syrup!
Ingredients
- 80 g porridge oats
- 3 eggs
- 125 g fat-free cottage cheese
- 1 tsp vanilla extract
- Low calorie cooking spray
Instructions
- Just whizz up all the ingredients in a food processor….
- Heat a good non-stick frying pan or pancake pan, spray with low calorie cooking spray and spoon in mixture (I used 2 tbsp mixture per pancake)
- Start on a high heat, then reduce the heat to low- the pancakes need to cook quite slowly to ensure that they cook all the way through.
- Once the pancake is firm, flip it over and cook the other side- about 2-3 minutes on each side.
- Repeat with all of the mixture. Makes 6-8 pancakes.
Notes
If you don’t want to use a spray oil, just use a little butter and brush over the pan with a silicone pastry brush.
