Healthy delicious pancakes

Gorgeous and guilt-free pancakes 



  • 80 g porridge oats
  • 3 eggs
  • 125 g fat-free cottage cheese
  • 1 tsp vanilla extract
  • Low calorie cooking spray


  1. Just whizz up all the ingredients in a food processor….
  2. Heat a good non-stick frying pan or pancake pan, spray with low calorie cooking spray and spoon in mixture (I used 2 tbsp mixture per pancake)
  3. Start on a high heat, then reduce the heat to low- the pancakes need to cook quite slowly to ensure that they cook all the way through.
  4. Once the pancake is firm, flip it over and cook the other side- about 2-3 minutes on each side.
  5. Repeat with all of the mixture. Makes 6-8 pancakes.


If you don’t want to use a spray oil, just use a little butter and brush over the pan with a silicone pastry brush.
