HEALTHY ORANGE AND OAT COOKIES
I’ve just recently discovered Grape Nuts, thanks to Nikki who blogs at Fopperholic, I hoped that they would be a replacement for my favourite Granola, but I am not keen on the taste of them just with yoghurt and fruit, however, they are fantastic baked into goodies! If you aren’t sure what they are you can see them here on Amazon (click) but they are available in the cereal aisle of most supermarkets. They provide a lovely crunch to these cookies, and the bonus is that they are Healthy Extra B on Slimming World! I have updated another recipe Carrot and orange oat cookies to use grape nuts as well as oats.
Don’t be put off by the addition of carrot- they only help to add sweetness to the cookies (as well as filling power, fibre and vitamin A, this also gives you 1 of your 5-a-day)- the orange zest gives them a beautiful flavour, the maple syrup and little sweetness, and the oats and grape nuts fibre and protein.
I’ve mainly eaten these warm, and freshly baked, which I think is the best way, but you can always make a bigger batch for easy breakfast and snacks. My 4 year old also loves these and they made a fantastic healthy snack for kids too!

Ingredients
- 20 g porridge oats
- 20 g grape nuts (see above if you aren’t sure what they are!)
- 1 egg
- 1 tbsp maple syrup
- zest of 1 orange
- a pinch of salt
- 1 small carrot (peeled and finely grated)
- 1 tbsp fat free natural yoghurt
Instructions
- Mix together all of the ingredients
- Line a baking tray with baking parchment, spray with Frylight and dollop the mixture on with spaces inbetween. I made 4 from this amount.
- Spray the top of the cookies with Frylight, and bake at 180c for 15 minutes until golden brown.
- Prep Time: 5 minutes
- Cook Time: 15 minutes
