My husband’s working away at the moment, so I wanted to make myself a lovely hearty plate of sausages, mash, onions and gravy (which he hates!). I’m using a couple of syns on the sausages, so thought I would have a go at making a tasty syn-free gravy (I can’t just have watery Oxo- need a nice thick gravy with this!). It’s really easy to do- just throw everything in, simmer and whizz, and I think it tasted fantastic- had to stop myself from eating it like soup!

Ingredients
- 1 onion peeled and quartered
- 300 ml boiling water
- 1 beef oxo cube
- 1 red wine stock pot from Tesco's- substitute for a tbsp red wine vinegar if you can't get one
- 1/4 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/2 carrot peeled and roughly chopped
- pepper
Instructions
- Chuck everything in a pan, bring to the boil, and then simmer on low for 30 minutes.
- Use a hand blender or food processor to whizz up!
