STRAWBERRY BAKED OATCAKES

Breakfast is definitely the meal that I struggle with most on Slimming World, I always used to just miss it out, but that’s not really an option now as I know I need to keep my metabolism going, and eat properly if I want to have effective weight loss. These oatcakes were just a little experiment as to whether I could make a nice little cake without using any high syn flour, and I think they worked nicely. They have quite a moist consistency, so I think they would definitely be better eaten warm. I served mine with more fresh strawberries which went perfectly. Although on a bit of a naughty day I’d definitely be tempted to add a dollop of Nutella! I used the Tesco Healthy Living Creme Fraiche which is extra low syn- so do check syns if you are using a different brand.

Ingredients

Scale
  • 40 g porridge oats
  • 2 tbsp Reduced fat creme fraiche
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 tbsp sweetener
  • 50 g strawberries (chopped)

Instructions

  1. Mix all ingredients together and allow to sit for a couple of minutes
  2. Spray a bun tin (or paper cases) with Frylight, divide mixture between 6
  3. Bake at 180c for 15-20 mins until golden brown
  • Prep Time: 5 minutes
  • Cook Time: 20 minutes
