PASSION FRUIT AND MANGO OVERNIGHT OATS
Every time I remember to make overnight oats I mean to do it more often, as they are so delicious! It’s one of those things that’s more than a sum of its parts.
I’m really fussy about food consistency and always have been- I hate squishy and sloppy things where you don’t know whether to chew or swallow! When I first tried overnight oats I was expecting them to be way too squishy for my taste- but they aren’t, in fact they have a very satisfying consistency- it’s almost like a pudding.
I have always loved passion fruit, and I buy lots as my 8 year old loves them- they are a great source of fibre and vitamin C & A. I’ve also recently discovered that M&S do handy little packs of passion fruit pulp for £1 which are just brilliant!
So this version of overnight oats is made with passion fruit, mango and garnished with a little bit of mint. Honestly, very tasty, but also very instagrammable! Passion fruit can be a little sour occasionally, but the sweetness of the mango made this as sweet as I needed it, but you could always add a little honey or maple syrup if you need a little more sweetness. The mint leaves aren’t entirely necessary, but they make it look pretty and add another nice little burst of freshness.
Passion fruit & mango overnight oats
Ingredients
- 40 g Porridge Oats
- 200 g fat free Greek yoghurt or Skyr I find these a nice creamy, thick consistency
- 3 passion fruits pulp removed
- 1/2 mango sliced into small cubes
- A few small mint leaves
Instructions
- Put 1/3 of the oats into the bottom of your jar/bowl
- spoon over 1/3 of the yoghurt
- Add the pulp of one passion fruit and spread over evenly
- Repeat twice, so you have 2 more layers, then top with the mango
- Pop into the fridge and leave overnight for the magic to happen! Add the mint in the morning
