This honey & mint sausage hotpot is a real family favourite – a comforting all-in-one meal that’s hearty, healthy and full of flavour. Sweet honey, fresh mint and tangy mustard combine to create a gorgeous sweet-and-savoury gravy that coats the sausages, potatoes and carrots beautifully.

It’s warming, satisfying and slimming-friendly at just 308 calories per serving, making it perfect for a midweek dinner that everyone will love.

The combination of honey and mint with sausages for this recipe was inspired by a lovely lady who used to make food for the company I used to work at in London. She used to bake mini Cumberland sausages with honey and mint and everyone in the company was obsessed with them! What is a sausage hotpot?

A hotpot is a traditional one-pot meal where meat and vegetables are cooked together in a rich gravy. It’s perfect for cold evenings, as it’s hearty, filling and fuss-free.

This version uses reduced-fat sausages, baby potatoes and carrots simmered in a honey, mint and mustard gravy. It’s light enough to be slimming-friendly but still feels indulgent and comforting. Of course you can use whatever your preferred type of sausage is- it works well with lovely butchers sausages too.

Can I make this ahead of time?
Yes, it’s a perfect make-ahead dish. Store in the fridge and reheat before serving.

Do I have to use reduced-fat sausages?
No, you can use any sausages you like – reduced-fat keeps the calories lower, but full-fat or flavoured sausages will also work.

Can I use dried mint instead of fresh?
Fresh mint works best here, but if you only have dried, use 1–2 teaspoons and adjust to taste.

How does Honey & Mint Sausage Hotpot work on Slimming World?

If you are following the Slimming World plan then this makes a lovely low syn meal. You will need to use your app to calculate the syns in the sausages that you are using, many of the supermarket own reduced fat sausages are only 1-2 syns each. You will also need to add the syns for the honey (2.5 syns per tablespoon) wholegrain mustard (0.5 syns per teaspoon) and oil. So if your sausages are 1 syn each, then the total is around 15 syns, and the syns per portion are around 4.

Description

This all-in-one hotpot brings together the flavours of honey, mint and wholegrain mustard in a sweet-and-savoury gravy for sausages, potatoes and carrots. This is delicious and family-friendly.


Ingredients

Spray oil

1 red onion, finely chopped

8 reduced-fat pork sausages, each cut into 6 pieces

2 garlic cloves, crushed

large handful mint leaves (about 20g/3/4 oz), finely chopped, plus extra to serve

2 tablespoons red wine vinegar

2 tablespoons honey

1 tablespoon light soy sauce

1 litre (1 3/4 pints) hot beef stock

2 teaspoons wholegrain mustard

3 tablespoons tomato puree

450g (1 lb) baby potatoes, halved (or quartered if large)

300g (10 1/2 oz) carrots, peeled and cut into matchsticks

salt and pepper


Instructions

Preheat the oven to 220°C/200°C fan (425°F), Gas Mark 7. 

 

Spray a flameproof casserole dish with oil and fry the onion and sausage pieces over a high heat for 5 minutes, constantly stirring (don’t worry if the sausages break a bit, this will help thicken the gravy).

 

Add the garlic, mint, vinegar, honey and soy sauce to the pan and stir-fry for 2 minutes, coating the sausage and onion and reducing the liquid slightly. Pour in the hot stock, stir, then add the mustard and tomato purée and mix to create the gravy.

 

Add the potatoes and carrots, season with salt and pepper, bring to the boil, then transfer to the middle shelf of the oven (uncovered) and cook for 40 minutes.

 

Give everything in the pot a thorough stir, then serve with mint scattered over the top.
