HOMEMADE PESTO

This pesto uses lemon juice rather than just olive oil to moisten it, so it’s lower syn than an oil filled one, but it’s a beautifully fresh taste and a very quick and easy meal option if you have it made up already!

Ingredients

  • garlic clove
  • 15 g pine nuts
  • 1 tbsp olive oil
  • 40 g fresh basil
  • 30 g parmesan
  • juice of 1/2 lemon
  • Large pinch coarse sea salt

Instructions

  • Using a mini chopper, whizz together the garlic and pinenuts
  • Add the basil, whizz again
  • Add oil, whizz again
  • Add the grated parmesan, lemon juice and salt and whizz until all combined

Notes

My favourite way to serve this is with rigatoni, fresh green beans and chopped bacon fried until it’s crispy. So delicious!
