ROASTED RED PEPPER HUMMUS

The sweet and smoky flavours in this roasted red pepper hummus are irresistible. Make this as a dip, or to serve up alongside falafel, couscous or kebabs as a delicious side dish.

Jars of pre-roasted peppers are a great storecupboard staple to have in. They have a soft consistency which means they blend down well into things like hummus and sauces, but they are also a great way to liven up a cous cous or rice dish, as they can be sliced straight from the jar. You’ll find them in most supermarkets alongside jars of olives.

Ingredients

  • 1 tin (400g) chickpeas (drained)
  • 1 roasted red pepper (from a jar) (drained)
  • 3 tbsp fat-free Greek yoghurt
  • 1/2 lemon (juiced)
  • 1 clove garlic (peeled)
  • 1/4 tsp salt
  • 1/2 tsp smoked paprika

Instructions

  1. Add all of the ingredients to a food processor or mini chopper, and whizz them up until you have a smooth hummus. If the consistency is too thick, add a little extra yoghurt.
