Smoky chorizo, creamy Primula cheese, rich tomatoes and orzo make up this quick and easy pasta dish- perfect for feeding the whole family!

As we are all relying more and more on dishes that are quick and easy to prepare, and use easy to source ingredients, I have put together this super tasty cheesy chorizo orzo. Chorizo is a great ingredient to have in the fridge as it lasts well, and this just uses some simple storecupboard mixed herbs, and easy to source baby tomatoes to make a really tasty and satisfying pasta dish.
The dish is finished off with creamy Primula, which melts right into the other ingredients to finish the dish off perfectly. I always have a tube or two of Primula in my fridge- it has a long life and works really well in so many dishes. I love it as the main cheese in homemade mac’n’cheese, as a perfect white sauce replacement in lasagne,or for making a quick Easy healthy tuna pasta bake.
This cheesy chorizo orzo can be ready from start to finish in 25 minutes, I used Primula Original in this version- it melts smoothly into the rest of the ingredients for a satisfyingly creamy finish.
For my cheesy chorizo orzo you will need:
- 50g chorizo
- 1 onion
- 3 cloves garlic
- 200g baby tomatoes
- 2 tsp dried mixed herbs
- 750ml chicken stock
- 200g orzo
- 120g Primula Original
- salt & pepper
Step 1: Chop the chorizo finely, dice the onion, cut the tomatoes in half and crush the garlic. Make up the chicken stock ready
Step 2: Fry the chorizo for a few minutes until it’s starting to crisp up a little
Step 3: Add the onion and fry gently for about 4 minutes until starting to soften
Step 4: Add the garlic, tomatoes and herbs and stir fry for 3 minutes
Step 5: Season with salt and pepper, add the orzo and the chicken stock, give everything a good stir and allow to simmer gently for 15-20 minutes, until the orzo is cooked through
Step 6: Once the pasta is cooked through, squeeze in the cheese, and stir to melt it through the pasta
Step 7: It’s ready to serve! You can garnish it with fresh parsley, a few little bits of fried chorizo and some baby tomatoes to make it look extra special!
