This recipe uses shop bought salsa to make a really delicious slow-cooked shredded chicken and black-bean Mexican style dish. I had little faith that putting 5 ingredients into the slow cooker would make something that I’d want to do again, but thought I’d give it a try and it was worth the experiment. Just stick in the slow-cooker in the morning and come home to a completely yummy dinner! I’ve based the syn values in this dish on the salsa I used, which was the Dorito’s hot salsa- but please check the syns in the salsa that you are using yourself!

Ingredients

  • 4 chicken breasts
  • 1 x 300g pot salsa try to get lowest syn one you can!
  • 1 tsp dried chilli flakes
  • 1 can black beans drained and rinsed
  • 1 can chopped tomatoes

Instructions

  • Mix together the salsa, chopped tomatoes and chilli flakes and pop into the slow-cooker pot
  • Immerse the chicken breasts in the mixture
  • Cook on low for 10-12 hours, or high for 6 hours
  • 30 minutes before end of cooking time add the black beans
  • Shred the chicken and serve!

Notes

If you don't want to use shop-bought salsa, there's a very nice chicken and black bean recipe in the index which is made from scratch. Serve with lime, rice and shredded lettuce.
