This recipe uses shop bought salsa to make a really delicious slow-cooked shredded chicken and black-bean Mexican style dish. I had little faith that putting 5 ingredients into the slow cooker would make something that I’d want to do again, but thought I’d give it a try and it was worth the experiment. Just stick in the slow-cooker in the morning and come home to a completely yummy dinner! I’ve based the syn values in this dish on the salsa I used, which was the Dorito’s hot salsa- but please check the syns in the salsa that you are using yourself!

Syns: 1 per portion

  • 4 chicken breasts
  • 1 x 300g pot salsa (try to get lowest syn one you can!)
  • 1 tsp dried chilli flakes
  • 1 can black beans (drained and rinsed)
  • 1 can chopped tomatoes

  1. Mix together the salsa, chopped tomatoes and chilli flakes and pop into the slow-cooker pot
  2. Immerse the chicken breasts in the mixture

If you don’t want to use shop-bought salsa, there’s a very nice chicken and black bean recipe in the index which is made from scratch. Serve with lime, rice and shredded lettuce.

  1. This is a wonderful dish, totally yummy. In the slow cooker the flavours really mingle nicely, plus the chicken is super tender. Going to try it with passata instead of tinned tomatoes; I’m sure it will be just as yummy!

  2. Hi,I’m just wondering. Are the calories noted at the top for the whole recipe. I’m about to make this and looking forward to it.
