Ingredients

- 4 chicken breasts
- 1 x 300g pot salsa (try to get lowest syn one you can!)
- 1 tsp dried chilli flakes
- 1 can black beans (drained and rinsed)
- 1 can chopped tomatoes
Instructions
- Mix together the salsa, chopped tomatoes and chilli flakes and pop into the slow-cooker pot
- Immerse the chicken breasts in the mixture
- Cook on low for 10-12 hours, or high for 6 hours
- 30 minutes before end of cooking time add the black beans
- Shred the chicken and serve!
Notes
If you don’t want to use shop-bought salsa, there’s a very nice chicken and black bean recipe in the index which is made from scratch. Serve with lime, rice and shredded lettuce.
