The best healthy baked sweet potato onion bhajis

Soft, sweet onions are encased in a light, Indian-inspired, spiced sweet potato batter, then baked in the oven to reduce the amount of oil that would be needed if you were deep frying them to create these sweet potato onion bhajis.

The oven baking also gives them a satisfying crunch on the outside. Serve these alongside a curry or a dhal, or simply have them as a delicious healthy snack.

How do these onion and sweet potato bhajis work on Slimming World

These are actually syn-free if you are following Slimming World! They really just consist of super healthy sweet potato, onion and spices, and by using low-calorie cooking spray (which I always find works brilliantly with baked snacks like this), you are barely using any oil at all.

What can I serve with these sweet potato bhajis?

These sweet potato bhajis go really well alongside any curry,  or can make up part of a fakeaway feast! I also think that these are delicious cold, and if I have any leftovers then I keep them in the fridge to snack on.

The best healthy baked onion bhajis

A deliciously healthy oven baked onion bhaji, using sweet potato and indian inspired spices to make a healthy and tasty batter



  • 4 onions (peeled and thinly sliced)
  • Low calorie cooking spray
  • 2 small sweet potatoes (pricked and microwaved for 7 minutes)
  • 1 egg
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon salt


  1. Preheat oven to 180c
  2. Fry the onions gently in low-calorie cooking spray for about 10 minutes, until soft and golden. Remove from the heat and allow to cool for a few minutes.
  3. Scoop the flesh out of the cooked sweet potatoes into a bowl and mash with a fork.
  4. Add the egg, spices and salt to the sweet potato, using the fork to combine thoroughly to make a batter. Stir in the cooled fried onions until thoroughly coated.
  5. Line a baking tray with baking parchment and use your hands to shape bhajis out of the mixture (this should make about 12)
  6. Spray thoroughly with cooking spray and bake for 45 minutes until golden and crisp.


Note: Try making a quick yoghurt and mint dip to go with these. Simply mix 250g fat-free Greek yoghurt, a handful of finely chopped mint leaves, 1 crushed garlic clove, 1 tablespoon lemon juice and a pinch of salt in a small bowl.
