Sticky toffee pudding mug cake

Description

Such an easy treat when you just need cake but don’t want to veer off plan!

Ingredients

Scale
  • 1 tbsp milk
  • 1 tbsp date nectar
  • 1/2 tbsp Flora Light
  • 1 tbsp self-raising flour
  • 1/2 tsp baking powder
  • 1/2 beaten egg
  • 1 dessert spoon powdered stevia (sweetener)

Instructions

  1. pop the milk and Flora Light into a mug and microwave for about 10 seconds, so the margarine melts
  2. stir in 1/2 tbsp date nectar, then the baking powder, flour, egg and stevia and mix well with a fork, breaking down any lumps.
  3. Microwave on high for 1 minute. This should be long enough, but give it a quick poke to make sure it’s springy and not squishy, and if it isn’t quite done, give it 10 second bursts until it is.
  4. Drizzle the remaining date nectar over the top and eat while warm

Notes

I know it’s a bit annoying having half an egg left, but I tried it with a whole one and it was too eggy! Make one for a friend at the same time, or throw the leftover egg in an omelette later!
