We had this as an alternative to a Sunday roast, and the whole family enjoyed it. The recipe was from Delicious Magazine but I made a few adaptations to their recipe to keep it low syn.

Sticky plum chicken

I adapted this recipe from Delicious Magazine (click here), chicken roasted with plums ends up sticky and juicy!Syns: 2 per portion
8chicken thighs/drumsticksskin and visible fat removed
2red onionscut into wedges
6plumshalved and stone removed
Olive oil spray- 10 sprays
sprig of thymeleaves only
Frylight
Salt and pepper
Instructions
Preheat oven to 200c
Mix together the honey and mustard in a small bowl
Thrown the onion wedges and plum halves into an oven proof dish, sprinkle over the thyme leaves, and spray with the olive oil
Dip and roll each piece of chicken into the mustard and honey and place on top of the onions/plums. Spoon any remaining mustard mix on top of the chicken. Season well, and then spray liberally with frylight all over.
Roast in the oven for 35-40 minutes until the chicken is cooked through, sticky and golden. 20 minutes into the cooking time, baste the chicken with some of the juices.
