SPICY PIZZA POPS

These are just little bites of deliciousness! You have the lovely melted mozzarella, pepperoni and jalapeno, but with a quinoa body they’re low in syns. Perfect dipped in my Best Ever Pizza Sauce (click here). They are also very quick and easy to make.

I got the idea from Wonky Wonderful (click here) on Pinterest, but have amended the recipe.

Description

All that pizza-ey goodness- golden baked pizza bites make a pizza craving disappear!.

Syns: 2 (for 9 pizza pops)


Ingredients

Scale
  • 100 g Quinoa (uncooked weight)
  • 140 g half fat mozzarella (70g is your Healthy extra A, chopped up small)
  • 30 g pepperoni (chopped up finely (I used Tesco Finest which is 12 syns per 100g– syns vary across brands so be cautious))
  • 30 g jalapenos (chopped finely)
  • 2 eggs (beaten)
  • low calorie cooking spray
  • salt and pepper

Instructions

  1. Cook the quinoa according to the packet instructions
  2. Mix the quinoa with the pepperoni, mozzarella, jalapenos and egg and season with salt and pepper
  3. Spray 18 mini muffin cases with low-calorie cooking spray, and divide the mixture among them. Press down firmly with a teaspoon to pack them in.
  4. Bake at 180c for 25-30 minutes until golden brown
  5. Serve with pizza sauce (my recipe here: https://www.theslimmingfoodie.com/best-ever-pizza-sauce/)

Notes

You can mix these up with whatever pizza toppings you like- peppers, mushrooms, anchovies- so many combinations to try!
