Slow-cooked Cuban Pork and sweet potato stew

A tasty and simple to make stew, perfect for the whole family.

Ingredients

Scale
  • 500 g approx. sweet potatoes, peeled and cubed
  • 500 g lean pork (I used loin, cubed)
  • 1 clove garlic (finely chopped)
  • 2 spring onions (finely chopped)
  • Orange zest (about half the orange)
  • 50 ml of freshly squeezed orange juice
  • 1 tin chopped tomatoes
  • 1 tsp salt
  • 1 tsp ground cumin
  • a few grinds of black pepper
  • juice of 1 lime
  • handful fresh coriander

Instructions

  1. Put all of the ingredients apart from the lime juice and coriander into the slow cooker
  2. Cook on low for 7 hours, stir half way through if you can.
  3. Serve with fresh lime juice squeezed over the top and sprinkled with chopped coriander

Notes

Add in some chopped green chilli if you’d like a bit of spice! I love this with cous cous and green beans
