SIMPLE CARROT SOUP
This easy carrot soup recipe is perfect to make when you are low on ingredients but fancy a quick and nutritious meal! Carrots have such a lovely sweet flavour, that with just a couple of other ingredients thrown in they make a silky and satisfying soup.
One of the reasons that I make this soup is that my kids love it, and it makes a brilliant quick dinner or lunch when you don’t have much in! It’s also easy to scale up to make into a big batch for the freezer, and there are plenty of other ingredients that you could add if you fancy jazzing it up a bit! Fresh ginger adds a lovely flavour, as does chilli. You could add some curry powder, or even just some smoked paprika- it’s a great base for experimenting with.

Ingredients
- 1 onion (peeled and finely chopped)
- 1 clove garlic (peeled and finely chopped)
- 2 large carrots (peeled and cut into chunks)
- 1 small potato (maris piper or similar, peeled and diced)
- 800 ml hot vegetable stock
- salt and pepper to taste
- Spray oil/low calorie cooking spray
Instructions
- Spray a pan with oil or low calorie cooking spray, and sweat the onion for a few minutes, allowing them to soften
- Add the garlic and carrots and stir fry for a minute
- Pour in the hot vegetable stock and add in the potato
- Simmer on medium heat for 20 minutes
- Using a hand blender, whizz into a smooth consistency
- Season with salt and pepper to taste
Notes
If you haven’t used your HEA milk for the day, then you can add 125ml with the vegetable stock for a slightly creamier soup. You can cook this in the slow cooker, add an extra 125ml of stock.
