Pesto, green bean and bacon rigatoni

Description

This is a great quick weeknight dinner, very tasty and little effort

Syns: 2 per portion


Ingredients

Scale
  • 200 g rigatoni
  • 1 tbsp green pesto
  • handful green beans (ends taken off and cut in half)
  • handful peeled broad beans
  • 2 rashers bacon (fat removed and finely chopped)
  • salt and pepper
  • 1 red chilli (finely chopped)


Instructions

  1. Cook the pasta according to packet instuctions
  2. in the meantime, fry the bacon pieces until crispy
  3. simmer the prepared beans for 3-4 minutes
  4. When the pasta’s cooked, stir in the pesto, bacon and beans and season to taste
  5. Serve garnished with the chilli

Notes

Fresh peas are also lovely in this
