PESTO, GREEN BEAN AND BACON RIGATONI

It’s easy to make your own pesto if you wish (recipe here https://www.theslimmingfoodie.com/homemade-pesto/) but shop bought pesto tends to be relatively low syn if you don’t have the time. This is a great quick throw-together dish, but tastes lovely.

Pesto, green bean and bacon rigatoni

This is a great quick weeknight dinner, very tasty and little effort

Ingredients

  • 200 g rigatoni
  • 1 tbsp green pesto
  • handful green beans ends taken off and cut in half
  • handful peeled broad beans
  • 2 rashers bacon fat removed and finely chopped
  • salt and pepper
  • 1 red chilli finely chopped

Instructions

  • Cook the pasta according to packet instuctions
  • in the meantime, fry the bacon pieces until crispy
  • simmer the prepared beans for 3-4 minutes
  • When the pasta’s cooked, stir in the pesto, bacon and beans and season to taste
  • Serve garnished with the chilli

Notes

Fresh peas are also lovely in this
