Pesto, green bean and bacon rigatoni

This is a great quick weeknight dinner, very tasty and little effort

It’s easy to make your own pesto if you wish (recipe here https://www.theslimmingfoodie.com/homemade-pesto/) but shop bought pesto tends to be relatively low syn if you don’t have the time. This is a great quick throw-together dish, but tastes lovely.

 

My Recipe

Ingredients

  • 200g rigatoni
  • 1 tbsp green pesto
  • handful green beans, ends taken off and cut in half
  • handful peeled broad beans
  • 2 rashers bacon, fat removed and finely chopped
  • salt and pepper
  • 1 red chilli, finely chopped

Method

  1. Cook the pasta according to packet instuctions
  2. in the meantime, fry the bacon pieces until crispy
  3. simmer the prepared beans for 3-4 minutes
  4. When the pasta's cooked, stir in the pesto, bacon and beans and season to taste
  5. Serve garnished with the chilli

Fresh peas are also lovely in this
