My Mum used to make this for me when I was little, it’s so simple but tasty, filling and satisfying

Ingredients

- 2 onions (finely chopped)
- 2 large carrots (finely diced)
- 750 g approx unsmoked gammon joint, cut into chunks
- 500 g yellow split peas (These need to be soaked overnight in preparation)
- 1 litre vegetable stock
- salt and pepper
Instructions
- Place the chopped onion, carrot, ham, split peas and stock into the slow cooker bowl. Season.
- Cook on high for 6-8 hours, or low for 10-12 hours

Notes
I like the soup to have a thick consistency, but if you prefer it thinner you can always dilute with more water.
