SPLIT PEA AND HAM SOUP

This is the ideal slow cooker soup- just throw everything in and leave it and it turns into a yummy hearty soup! The ham becomes fall-apart tender and the split peas break down forming a thick soup.

The only slight pain is remembering to soak the split peas the night before!

Ingredients

Scale
  • 2 onions (finely chopped)
  • 2 large carrots (finely diced)
  • 750 g approx unsmoked gammon joint, cut into chunks
  • 500 g yellow split peas (These need to be soaked overnight in preparation)
  • 1 litre vegetable stock
  • salt and pepper

Instructions

  1. Place the chopped onion, carrot, ham, split peas and stock into the slow cooker bowl. Season.
  2. Cook on high for 6-8 hours, or low for 10-12 hours

Notes

I like the soup to have a thick consistency, but if you prefer it thinner you can always dilute with more water.
