SPLIT PEA AND HAM SOUP
This is the ideal slow cooker soup- just throw everything in and leave it and it turns into a yummy hearty soup! The ham becomes fall-apart tender and the split peas break down forming a thick soup.
The only slight pain is remembering to soak the split peas the night before!

Ingredients
- 2 onions finely chopped
- 2 large carrots finely diced
- 750 g approx unsmoked gammon joint, cut into chunks
- 500 g yellow split peas These need to be soaked overnight in preparation
- 1 litre vegetable stock
- salt and pepper
Instructions
- Place the chopped onion, carrot, ham, split peas and stock into the slow cooker bowl. Season.
- Cook on high for 6-8 hours, or low for 10-12 hours

Notes
I like the soup to have a thick consistency, but if you prefer it thinner you can always dilute with more water.
