EASY ROASTED RATATOUILLE

I really like the type of cooking that you can just get prepped and then leave cooking without having to worry about it! when we moved into our house 5 years ago, it came with an Aga- I was soooo excited about it- it’s so cosy in the kitchen and I thought I’d love cooking on it. I do love the fact that it’s on all the time and you don’t have to thik about pre-heating the oven, and I love the fact that it’s so cosy on winter mornings and I can heat the girls clothes up, but actually I really miss my old gas hob! Partly it’s a bit of a pain as we don’t have the proper Aga pans that stack on top of eachother, and we can’t get it quite up to the heat that it’s supposed to be so I can never properly roast anything (the top heat is 180c on mine).

Anyway, I try to roast things as much as possible as you can’t leave pans simmering on the hot plates for hours or the Aga loses all it’s heat, and actually, it’s so easy just being able to pop something into the oven and leave it!

I’ve been meaning to make a ratatouille for ages- I’ve never really had it before and I thought it would make a great accompaniment for loads of things (sausages, chicken), as well as a nice easy lunch or dinner on its own.

I was really pleased with this one- it tastes really delicious, and it’s actually been in our meals in one way or another quite a few times during the week!

Ingredients

Scale
  • 2 red onions (sliced into thin wedges)
  • 12 garlic cloves (peeled but whole)
  • 1 aubergine chopped into chunks
  • 3 courgettes chopped into chunks
  • 1 large bottle passata (690g)
  • 1 red (and 1 yellow pepper deseeded and chopped)
  • 1 tbsp thyme (dried)
  • 1 tbsp rosemary (dried)
  • 2 tbsp balsamic vinegar
  • salt and pepper

Instructions

  1. Pre-heat the oven to 180c
  2. Put everything into a deep baking tray and mix together
  3. Pop into the oven and bake for 1 hour, stirring once half way through
  4. Season to taste with salt and pepper and serve!

Notes

Lovely with some fresh basil on top
