CHEEKY NANDO’S STYLE PERI PERI CHICKEN
I was really late on the Nando’s bandwagon- I always thought I liked the look of it but never had the chance to go, once I went it was confirmed! I love chilli, I love chicken, I love chargrilled things, I love chips, I love sweetcorn, I love garlic bread- it’s like it was made for me!
Unfortunately, although it’s not as bad as some fast food, it’s still full of fat and sugar. Since I have had kids we hardly ever get to eat out anyway, and if we go it’s usually using our Tesco Clubcard points (so sad!) so Nando’s isn’t an option, BUT once Nando’s released their sauces for sale in the supermarkets it became our very favourite fakeaway! I make my own rub because the bought one has sugar in it (4 syns a sachet if you are on Slimming World), and it’s really easy once you have all of the spices! Plus it’s much cheaper and you can make a big batch so it’s always ready to go! You can find my Nando’s spice mix here- if I’m making some up I’ll usually do a larger quantity to make for a quicker meal next time. I save my empty jars to keep spice mixes in.
We have our Nando’s chicken with the supermarket bought Nando’s sauce, sweetcorn, my perfect chips (no fat!) or chips made in the Tefal Actifry, garlic bread made with a wholemeal roll and not too much butter and some rocket salad.
This recipe really does feel like an authentic Nandos fakeaway, making it a real go to for that Friday night treat dinner.
