BROCAMOLE

This is my version of Nigella’s ‘brocamole’ idea- she in turn credits the idea to Ludo Lefebvre, who did a purely broccoli version with no avocado.

I adore fresh guacamole, and although avocados are very good for you and full of ‘healthy’ fat, if you are following Slimming World it is very high in syns and for me it’s great to be able to enjoy guacamole without eating a ton of syns!

Description

A lovely fresh version of guacamole, with fresh broccoli to cut the calories

Syns: 2.5 per portion


Ingredients

Scale
  • 1 head broccoli
  • 1 ripe avocado
  • 1 fresh red chilli (deseeded)
  • Juice of 2 limes
  • 12 tsp salt (to taste)

Instructions

  1. Cut away the broccoli stem and boil the florets for 3 minutes, then drain, plunge into cold water for 1 minute, and drain again.
  2. Pop the broccoli into a food processor and blend well
  3. Add in the avocado, chilli, lime juice and salt and blend again until well combined.
