Ingredients

- 40 g jumbo porridge oats
- 1/4 tsp ground cinnamon
- 1 tsp vanilla extract
- small pinch salt
- 150 ml water
- 100 ml semi-skimmed milk
- 1 apple (peeled, cored and halved. 1 half grated, 1 half diced)
- 1 tsp maple syruo
- low calorie cooking spray
- 2 tsp maple syrup to drizzle on top
Instructions
- Prepare the apple by peeling, grating 1 half and dicing the other half into little cubes
- In a small saucepan, gently heat together the oats, cinnamon, vanilla extract, salt, water, milk and grated apple. Simmer gently, stirring regularly for about 5 minutes until the porridge has a thick, creamy consistency
- In the meantime, heat some low calorie cooking spray in a small frying pan and pop in the diced apple. Stir fry it on a medium heat for 1 minute, then add in 1 tsp maple syrup and a tiny pinch cinnamon. Stir fry this gently until it is golden brown.
- Serve up the porridge topped with the fried apple and drizzled with maple syrup.
