THAI STYLE CHICKEN SATAY FRIED RICE

Recently I took part in the Tefal Slimmer’s Secret Supercook challenge– I was asked to create a healthy and delicious dish using the Tefal Actifry, and this is what I came up with!

I adore satay, and I really liked the idea of a healthy satay dish that you could eat on a day-to-day basis. I also love any dish where all the elements are combined so you don’t need to cook lots of sides- the Tefal Actifry is perfect for fried rice dishes as it constantly stirs for you!

For ease and convenience here I have used the pre-cooked rice pouches here- this means you have the full meal ready in just 20 minutes, with no extra pans, however you can pre-cook your own rice for it, you might just need to add some extra water while it is cooking in the Actifry.

If you want to make this dish even lower in fat, you can replace the peanut butter with peanut butter powder!

Thai style chicken satay fried rice

Ingredients

  • 3 spring onions trimmed and finely sliced
  • 1 large or 2 small carrots peeled and diced small, or julienned
  • 1 red pepper finely diced
  • 1 red chilli finely chopped
  • 2 cloves garlic finely chopped
  • 2 handfuls frozen peas
  • 250 g pre-cooked wholegrain/brown rice
  • 2 tsp sesame oil
  • 120 ml cold water
  • 2 chicken breasts chopped into small chunks
  • For the marinade:
  • 2 tbsp smooth peanut butter
  • 3 tbsp light soy sauce
  • zest & juice 2 limes
  • 1 tbsp fish sauce

Instructions

  • Mix together the peanut butter, soy sauce, fish sauce and lime juice and zest until combined
  • Add this to the chopped chicken and stir in thoroughly
  • Brush 2 tsp sesame oil over the pan of the Actifry, and add the chicken. Set to cook for 7 minutes (Open up half way thought just to ensure chicken isn’t clumping around paddle)
  • Add in the spring onions, pepper, carrots, red chilli and garlic and cook for a further 7 minutes
  • Add in the precooked rice, frozen peas, and 120ml water and cook for a further 6 minutes
  • Garnish with coriander, red chilli and slices of lime!

Notes

If you don’t have an Actifry, you can do this in a wok by following the same process and timings!
