I’ve been embracing all things frozen over the past 12 months, and I love having frozen products stocked up for easy meals! I have to say I’ve always hated chopping onions, and I love the pre-chopped onions that you can buy!
I made this meal on a day where I was incredibly tight for time, but really wanted to still make a nice wholesome dinner for my family- so I took a risk (for me!) and threw a load of stuff into the slow cooker and hoped for the best! I was really pleased with the results and I thought that this meal tasted like a lot more effort had gone into it than actually had!
I bought my frozen garlic, onions and casserole mix from Tesco’s, but I’m sure most supermarkets do similar packs, and of COURSE you could use freshly prepared ingredients if you wanted to, this was just a time-saver for me on this occasion!
Also what makes this a real winner is that there is no waste with this- normally I would probably have used half the swede, some of the celery etc and then ended up wasting the leftovers.
This casserole has a thin sauce, but once everything is cooked some gently mashing of the swede and turnip thickens it up!
Traditionally I would have made this with cider, but on this occasion I used cloudy apple juice to cut the calories and cost and this worked really well.
