Simply delicious crispy chicken

The quickest and easiest way to make crispy chicken, and it tastes so good! 

I learnt this little secret from Annabel Karmel’s toddler cookery book! Rice Krispies make an amazing crispy coating for chicken- It’s nicer than any unhealthy fried chicken! Every time I have made these for my kids I have ended up unable to resist them… so just gave in and made them for myself!


My Recipe

Serves: 2
Syns: 4 (total syns for 20g rice krispies)
Healthy Extra: none


  • 4 free-range chicken thigh fillets
  • 1 egg
  • 20g rice krispies, finely crushed (pestle and mortar/food processor/plastic bag and rolling pin)
  • salt and pepper
  • low calorie cooking spray or spray oil (extra syns on SW)


  1. Pre-heat oven to 180c
  2. Dip the chicken into the beaten egg and then roll to coat in the crushed rice krispies
  3. Place on greaseproof paper on a baking tray, season with salt and pepper and spray with cooking spray
  4. Bake at 180c for 20-25 minutes until golden and crispy on the outside and cooked through.
