Philly cheesesteak traybake

Ingredients

  • 250 g PGI Welsh Beef sirloin steak
  • 2 small/medium onions (finely sliced)
  • 1 small green pepper (finely sliced)
  • 1 small red pepper (finely sliced)
  • 2 portobello mushrooms (sliced)
  • 60 g mild cheddar
  • 100 g mozzarella
  • For the dressing: Juice of 1 lemon (2 tbsp Worcestershire sauce, 1 tbsp soy sauce, 1 tsp garlic granules, 1/2 tsp onion granules, 1/4 tsp mustard powder)
  • salt and pepper
  • low calorie cooking spray/spray oil
  • parsley to garnish

Instructions

  1. Pre-heat the oven to 180°C
  2. Spread the sliced onions and peppers over the bottom of a non-stick baking tray
  3. Place the steak on top of the onions and peppers
  4. Mix together the dressing ingredients in a small bowl, and pour over the steak and peppers. Season with salt and pepper
  5. Spray with spray oil, or low-calorie cooking spray
  6. Pop in the oven for 15 minutes
  7. After 15 minutes, remove from the oven, move the steak to a chopping board, and remove the fat and finely slice the steak
  8. Mix the mushrooms into the pepper and onion mix, and add in the chopped steak
  9. Sprinkle the cheddar over the top, and spread the slices of mozzarella over
  10. Pop back into the oven and bake for 5 minutes, by which time the cheese should be melted
  11. Serve, sprinkled with chopped fresh parsley
