A deliciously tasty soup that takes minimal preparation time

- 2 tins chopped tomatoes
- 1 carrot (washed but unpeeled and roughly chopped)
- 5 cloves garlic (peeled but whole)
- 1 onion (peeled and roughly chopped into wedges)
- 300 ml vegetable stock
- handful fresh basil leaves
- salt and pepper
Instructions
- Pre-heat the oven to 180c
- Put everything into a deep baking tray (apart from the vegetable stock) and mix together well
- Pop into the oven and bake for 1 hour, stirring once half way through
- Remove from the oven, and add in the (hot) vegetable stock). Using a hand-blender, whizz it all up until smooth.
- Season to taste with salt and pepper and serve with a little extra fresh basil

Lovely with some basil on top
