No fuss traybake tomato and basil soup

Description

A deliciously tasty soup that takes minimal preparation time

Ingredients

Scale
  • 2 tins chopped tomatoes
  • 1 carrot (washed but unpeeled and roughly chopped)
  • 5 cloves garlic (peeled but whole)
  • 1 onion (peeled and roughly chopped into wedges)
  • 300 ml vegetable stock
  • handful fresh basil leaves
  • salt and pepper


Instructions

  1. Pre-heat the oven to 180c
  2. Put everything into a deep baking tray (apart from the vegetable stock) and mix together well
  3. Pop into the oven and bake for 1 hour, stirring once half way through
  4. Remove from the oven, and add in the (hot) vegetable stock). Using a hand-blender, whizz it all up until smooth.
  5. Season to taste with salt and pepper and serve with a little extra fresh basil

Notes

Lovely with some basil on top
