MEDITERRANEAN STYLE LAMB KEBAB

I’m still discovering what my Tefal Actifry can do, I’ve recently received some recipe challenges from Tefal, and this was my second!

My challenge from Tefal was to create a healthy Mediterranean style kebab recipe. I wasn’t sure how easy this would be to do in the Actifry, but was so happy with the results! I love any recipe where you can throw in all of the ingredients and then leave it to look after itself, and this was a perfect example of this!

I am really impressed with the Actifry – everyone in the family loved this recipe, and it almost seems too easy to be able just to pop everything into the pot and leave it to get on with the cooking!

Mediterranean style lamb kebab

A delicious and easy to make lamb kebab mix

Ingredients

  • 2 lean lamb steaks
  • 1 courgette roughly chopped
  • 1 red onion cut into wedges
  • 1 red pepper deseeded and roughly chopped
  • 4 pickled chillies chopped
  • 2 tsp paprika
  • a pinch turmeric
  • 1/2 tsp sumac
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1 tbsp tomato puree
  • juice of 1 lemon
  • 3 cloves garlic crushed
  • 1 tsp olive oil

Instructions

  • Cut the lamb into chunks
  • Mix together the paprika, turmeric, sumac, oregano and salt, and use to coat the lamb. Add in the tomato puree, garlic and lemon juice and mix together.
  • Add the oil into the Actifry and then pop in the onion, courgette, pepper and pickled chilli. Tip in the lamb mixture
  • Set the Actifry to 15 minutes and start cooking
  • I serve this in wholemeal pitta, with a fat-free yoghurt and fresh mint dressing.

Notes

If you don’t have an Actifry, you can do this in a frying pan. Cook the onion for a couple of minutes first, add the lamb and stir fry for 3-4 minutes and then add in the rest of the veg. Fry gently for about 10 minutes, stirring as you go.
