JERK PORK WITH PINEAPPLE
I’m all for a ready-made jerk seasoning, but it’s also nice to do it yourself sometimes for that fresher taste- this is a gorgeous tasty jerk pork dish, and it’s really complemented by the sweet and juicy pineapple.
PLEASE NOTE: THE PORK REQUIRES OVERNIGHT MARINATING!

Really tasty homemade jerk pork, served with refreshing pineapple
Ingredients

- 4 pork steaks (all visible fat removed (1 per person so maybe a couple extra if they are small))
- For the sauce:
- 225 g onions (quartered)
- 1–1½ scotch bonnet or other chillies according to taste (halved and seeded)
- 50 g root ginger (peeled and chopped roughly)
- ½ tsp ground allspice
- small bunch fresh thyme (leaves only)
- 1 tsp freshly ground black pepper
- 120 ml white wine vinegar
- 20 ml dark soy sauce
- To serve:
- rice and peas
- 1 pineapple (peeled, cored and cut in wedges)
- 4 limes (3 cut in wedges, 1 juice only)
Instructions
- Put all the ingredients for the Jerk Sauce in a food processor and whiz until smooth.
- Place the pork in a large shallow dish, pour over the sauce, cover and leave to marinade in the fridge overnight.
- On a hot griddle cook the pork for 15-20 minutes (depending on the thickness of the steaks),
- Put the leftover jerk marinade into a frying pan and bring to a bubble, then cook at a simmer, stirring regularly for 10 minutes.
- Serve the jerk pork with the rice and peas (basmati rice with cooked kidney beans), extra jerk sauce, pineapple and wedges of lime on the side.
