Gnocchi broccoli cheese

Description

A savoury, creamy cheese sauce bubbles away with gnocchi and broccoli for a delicious one-pot bowl of comfort food.

Ingredients

500ml (18 fl oz) semi-skimmed milk

500g (1lb 2oz) fresh gnocchi

400g (14oz) can of haricot beans, drained and rinsed

100g (3 1/2 oz) reduced fat soft cheese

250ml (9fl oz) hot vegetable stock

1/2 teaspoon onion granules

1/2 teaspoon garlic granules

florets from a head of broccoli, broken into bite-sized pieces

120g (4 1/4oz) mature cheddar cheese, grated

salt and pepper


Instructions

Preheat the oven to 220°C/ 200°C fan (425°F), Gas Mark 7.

Pour the milk into a deep flameproof casserole dish and bring it up to a simmer.

Add the gnocchi and haricot beans and simmer for 2 minutes. Stir in the soft cheese and simmer for a further 5 minutes, stirring constantly.

Add the stock, onion granules, garlic granules, broccoli and about half the cheddar and stir it all together. Season with salt and pepper. Bring to the boil, then remove from the heat and sprinkle the remaining cheese over the top.

Pop the pot into the oven, near the top, and bake for 20 minutes, or until the cheese on top is browning and bubbling.

Notes

You can turn this into a gorgeous cheesy tuna bake. Simply add a can of drained tuna in spring water at the same time as the broccoli in step 4 and stir it in thoroughly. You can also spice up the recipe with 1 teaspoon of chilli flakes.

If you want to increase the amount of vegetables, try adding cauliflower florets to the sauce for a cauliflower cheese vibe.
