Easy sweet and sour chicken

A delicous sweet and sour chicken

I’ve looked at lots of sweet and sour recipes, and as I always like the easy route I couldn’t really find any that just seemed quick and easy to do, so I came up with this one. I wanted to avoid adding cornflour, but to still have a thick sauce, and I really wanted to have it packed with flavour but full of healthy ingredients. This is so so easy to make, and tastes great.

My Recipe

Serves: 2
Syns: 2 per portion (sugar/orange juice/cooked/pureed pineapple)
Healthy Extra: none

  • 2 chicken breasts, cut into chunks
  • 2 tbsp soy sauce
  • 1 tbsp of cider or white wine vinegar
  • 4 tbsp orange juice
  • 1 tbsp tomato puree
  • 1 small red pepper, seeds removed and then finely diced
  • 120g tinned or fresh pineapple, cut into small chunks
  • 1 tsp brown sugar
  • Frylight

  1. Stir fry the chicken in Frylight for 5 minutes in a frying pan
  2. put the pineapple, pepper, soy sauce, vinegar, tomato puree, orange juice and sugar into a small pan, stir well, and bring to the boil.
  3. Add about 4tbsp water, and then use a hand blender to fully puree the sauce.
  4. Add the chicken, and allow to simmer in the sauce for 15 minutes.
  5. Serve
