Easy one-pot BBQ chicken

Description

Smoky, rich bbq chicken bursting with flavour


Ingredients

Scale
  • 500 g approx free-range chicken thigh fillets
  • 1 onion (peeled and diced (or a handful of frozen onion!))
  • 500 g passata
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tsp ground ginger
  • 1 tsp chilli powder
  • 2 tbsp balsamic vinegar
  • 1 tbsp dark soy sauce
  • 1 tbsp granulated sweetener
  • juice of 1 lemon
  • salt and pepper
  • low calorie cooking spray/spray oil


Instructions

  1. In a deep frying pan (one that has a lid), spray with low calorie cooking spray and stir fry the chopped onions for 2 minutes on a high heat
  2. Add in the chicken thighs, and fry vigorously for a minute on each side
  3. Lower the heat to medium, and pour in the passata. Stir well.
  4. Add the onion powder, garlic powder, smoked paprika, ground ginger, chilli powder, sweetener, balsamic vinegar, soy sauce and lemon juice, and stir well!
  5. Season with salt and pepper, put the lid on the saucepan, and simmer on a low heat for 30 minutes.
  6. Serve sprinkled with sliced spring onions

Perfect with sweet potato fries!
