This is one of my favourite recipes of all time, and I’m really excited I’ve found a way to make it Slimming World friendly!

Ingredients

- For the chicken:
- 2 chicken breasts (chopped into chunks)
- 1 small onion (finely chopped)
- 1 garlic clove (crushed)
- 1 tsp ground coriander
- 1 tsp ground ginger
- 2 tbsp dark soy sauce
- Juice of 1 lemon (reserve 2 tbsp for the peanut sauce)
- 1 tsp dark brown sugar
- Ground black pepper
- For the Peanut Sambal:
- 1 small onion (finely chopped)
- 1/2 tsp chilli powder
- 2 tbsp powdered peanut butter
- 2 tbsp dark soy sauce
- 2 tbsp lemon juice
- 100 ml cold water
- 1 tsp dark brown sugar
- pinch salt
- Low calorie cooking spray
Instructions
- Mix all of the marinade ingredients together, add the chicken and marinade for at least one hour
- Put chicken pieces on skewers, and grill for about 3 mins on each side (check cooked through before serving)
- To make the Peanut Sambal:
- Cook the onion gently in low calorie cooking spray until soft- about 7-8 minutes
- Stir in all of the other ingredients- chilli, peanut butter powder, soy sauce, lemon juice, water, sugar and salt
- Cook gently, stirring, until the sauce is thick and smooth.
