Chicken satay with peanut sambal

This is one of my favourite recipes of all time, and I’m really excited I’ve found a way to make it Slimming World friendly!

Syns: 2 per portion


  • For the chicken:
  • 2 chicken breasts (chopped into chunks)
  • 1 small onion (finely chopped)
  • 1 garlic clove (crushed)
  • 1 tsp ground coriander
  • 1 tsp ground ginger
  • 2 tbsp dark soy sauce
  • Juice of 1 lemon (reserve 2 tbsp for the peanut sauce)
  • 1 tsp dark brown sugar
  • Ground black pepper
  • For the Peanut Sambal:
  • 1 small onion (finely chopped)
  • 1/2 tsp chilli powder
  • 2 tbsp powdered peanut butter
  • 2 tbsp dark soy sauce
  • 2 tbsp lemon juice
  • 100 ml cold water
  • 1 tsp dark brown sugar
  • pinch salt
  • Low calorie cooking spray


  1. Mix all of the marinade ingredients together, add the chicken and marinade for at least one hour
  2. Put chicken pieces on skewers, and grill for about 3 mins on each side (check cooked through before serving)
  3. To make the Peanut Sambal:
  4. Cook the onion gently in low calorie cooking spray until soft- about 7-8 minutes
  5. Stir in all of the other ingredients- chilli, peanut butter powder, soy sauce, lemon juice, water, sugar and salt
  6. Cook gently, stirring, until the sauce is thick and smooth.
