Breakfast eggy crumpets

This has stayed in my top 3 of ‘treat’ breakfasts since I discovered it years ago- truly delicious.

Syns: 10 ( crumpets 5 syns each)

Brown sauce 1 syn per tbsp


  • 4 crumpets
  • 1 red chilli (finely chopped)
  • 4 smoked bacon medallions (optional)
  • 2 large free range eggs
  • salt and pepper
  • low calorie cooking spray
  • Brown sauce


  1. Beat the eggs in a flat-bottomed bowl, and add in the chopped chilli and salt and pepper
  2. One at a time, place the crumpets in the egg mixture and press down with a fork until they have soaked up all of the egg, set aside on a plate (scrape any leftover chilli onto the top of them)
  3. Fry the bacon medallions until cooked at set aside
  4. Spray a pan with low calorie cooking spay, and gently fry the eggy crumpets for a few minutes on each side, until they are golden brown, and when you push on them with a spatula you don’t get ‘wet’ egg squeezing out
  5. Serve the crumpets with the bacon and brown sauce, and sprinkle over a little extra chilli if you fancy!


More often than not we have these without the bacon- they are delicious either way!
