Description
A smoky, warming and hearty soup, a perfect winter warmer

Ingredients
Scale
- 1 tbsp coconut oil (or olive oil if you don’t have it)
- 1 onion (chopped)
- 4 cloves garlic (crushed)
- 200 g dried red lentils
- A handful of washed kale
- 2 carrots (peeled and chopped)
- 1 litre vegetable stock
- 500 g passata
- salt and freshly ground pepper
- 2 tsp smoked paprika
Instructions
- Heat up the coconut oil in a large pan, and fry the onion gently for 5 minutes to soften
- Crush in the garlic, and stir fry gently for a couple more minutes
- Add in the red lentils, kale, carrots and half of the vegetable stock, simmer gently for 10 minutes
- Add in the passata, and the rest of the vegetable stock and simmer gently for 25 minutes
- Add the smoked paprika, and salt and pepper and stir through
- Using a hand blender or a food processor, blend until smooth, and then season again to taste if necessary.
- Serve
Notes
