Description

A smoky, warming and hearty soup, a perfect winter warmer

Syns: 1 per portion


Ingredients

Scale
  • 1 tbsp coconut oil (or olive oil if you don’t have it)
  • 1 onion (chopped)
  • 4 cloves garlic (crushed)
  • 200 g dried red lentils
  • A handful of washed kale
  • 2 carrots (peeled and chopped)
  • 1 litre vegetable stock
  • 500 g passata
  • salt and freshly ground pepper
  • 2 tsp smoked paprika


Instructions

  1. Heat up the coconut oil in a large pan, and fry the onion gently for 5 minutes to soften
  2. Crush in the garlic, and stir fry gently for a couple more minutes
  3. Add in the red lentils, kale, carrots and half of the vegetable stock, simmer gently for 10 minutes
  4. Add in the passata, and the rest of the vegetable stock and simmer gently for 25 minutes
  5. Add the smoked paprika, and salt and pepper and stir through
  6. Using a hand blender or a food processor, blend until smooth, and then season again to taste if necessary.
  7. Serve

Notes

If you are on Slimming World and want to make this syn free, then just use FryLight rather than coconut oil in the first step.
