2-ingredient sweet potato pancakes

These are so simple and very delicious- perfect on their own with the dip, or as a side for your main meal

I love these little pancakes- they taste lovely, are very easy to make and are very versatile! I serve mine with a yoghurt dip, but really there are endless possibilities! (Here’s the dip I like https://www.theslimmingfoodie.com/lemon-garlic-and-mint-dip/)

 

My Recipe

Ingredients

  • 2 medium sweet potatoes
  • 2 eggs
  • Salt and pepper
  • Frylight

Method

  1. Prick the potatoes, place on a plate and microwave them for ten minutes (you can oven bake them if you have time!)
  2. Scrape out and mash the cooked flesh with a fork and leave to cool
  3. Once cooled, mix in the raw eggs, and season well with salt and pepper
  4. Heat a non-stick frying pan, spray with frylight and spoon in a large dessert spoonful of mixture, pressing down a little to form a small pancake. I usually fit 3 at a time in the pan.
  5. Fry on a medium heat for about 5 minutes, you want the mixture to solidify, but not to burn
  6. Flip over (I use 2 spatulas, one to flip and one to steady as they are quite delicate), and cook for approx 5 mins on the other side. They should be golden brown on both sides when you serve.
  7. Serve with a yoghurt dip (see seperate recipe)

Additional Info
