2-INGREDIENT SWEET POTATO PANCAKES
I love these little pancakes- they taste lovely, are very easy to make and are very versatile! I serve mine with a yoghurt dip, but really there are endless possibilities! (Here’s the dip I like https://www.theslimmingfoodie.com/lemon-garlic-and-mint-dip/)

- 2 medium sweet potatoes
- 2 eggs
- Salt and pepper
- low calorie cooking spray
Instructions
- Prick the potatoes, place on a plate and microwave them for 8 minutes (or until tender all the way though) you can oven bake them if you have time!
- Scrape out and mash the cooked flesh with a fork and leave to cool for 5 minutes
- Once cooled, mix in the raw eggs, and season well with salt and pepper
- Heat a non-stick frying pan, spray with low calorie cooking spray and spoon in a large dessert spoonful of mixture, pressing down a little to form a small pancake. I usually fit 3 at a time in the pan.
- Fry on a medium heat for about 5 minutes, you want the mixture to solidify, but not to burn
- Flip over (I use 2 spatulas, one to flip and one to steady as they are quite delicate), and cook for approx 5 mins on the other side. They should be golden brown on both sides when you serve.
- Serve with a yoghurt dip (see recipe for lemon, garlic and mint dip)
Notes
