Ingredients

  • 2 medium sweet potatoes
  • 2 eggs
  • Salt and pepper
  • low calorie cooking spray

Instructions

  1. Prick the potatoes, place on a plate and microwave them for 8 minutes (or until tender all the way though) you can oven bake them if you have time!
  2. Scrape out and mash the cooked flesh with a fork and leave to cool for 5 minutes
  3. Once cooled, mix in the raw eggs, and season well with salt and pepper
  4. Heat a non-stick frying pan, spray with low calorie cooking spray and spoon in a large dessert spoonful of mixture, pressing down a little to form a small pancake. I usually fit 3 at a time in the pan.
  5. Fry on a medium heat for about 5 minutes, you want the mixture to solidify, but not to burn
  6. Flip over (I use 2 spatulas, one to flip and one to steady as they are quite delicate), and cook for approx 5 mins on the other side. They should be golden brown on both sides when you serve.
  7. Serve with a yoghurt dip (see recipe for lemon, garlic and mint dip)

Notes
