One of the most refreshing drinks in the world!
Mojitos would nearly always be my cocktail of choice- the combination of fresh lime juice, mint and a little bit of sugar just tastes amazing, and for me they really don’t need the alcohol to be a real treat- in fact I think I prefer them without! This is a guilt-free version- refreshing and delicious.

- 200 g ice- approx 16 ice cubes
- 1 tsp brown sugar
- juice of 1 lime
- 8 mint leaves
- 100 ml apple juice
- 200 ml diet lemonade
- In a blender or food processor, add in all of the ingredients, holding back 4 mint leaves
- Blend up until the ice is finely crushed, and transfer to glasses, garnishing with mint and extra lime wedges
