SPINACH AND CARROT PILAU RICE

This really does make your rice extra special and brings it to life alongside your curry.

Ingredients

  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1 large carrot grated
  • 200 g basmati rice
  • 100 g baby spinach chopped
  • 400 ml boiling water
  • low calorie cooking spray

Instructions

  • Spray a large frying pan with the cooking spray, and fry the cumin seeds for 1 minute
  • Add the carrot and turmeric and stir fry for another 2 minutes
  • Add the rice and a pinch of salt and pour in 400ml boiling water
  • Bring to the boil, reduce the heat, and cook with a lid loosely covering the pan for 5 minutes. Add the spinach, stir, loosely cover again.
  • Cook for a further 10 minutes until the rice is fluffy and tender

Notes

Chopped coriander sprinkled over the top is lovely as a garnish
