SPINACH AND CARROT PILAU RICE
This really does make your rice extra special and brings it to life alongside your curry.

Ingredients
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 large carrot grated
- 200 g basmati rice
- 100 g baby spinach chopped
- 400 ml boiling water
- low calorie cooking spray
Instructions
- Spray a large frying pan with the cooking spray, and fry the cumin seeds for 1 minute
- Add the carrot and turmeric and stir fry for another 2 minutes
- Add the rice and a pinch of salt and pour in 400ml boiling water
- Bring to the boil, reduce the heat, and cook with a lid loosely covering the pan for 5 minutes. Add the spinach, stir, loosely cover again.
- Cook for a further 10 minutes until the rice is fluffy and tender
Notes
Chopped coriander sprinkled over the top is lovely as a garnish
