I’ve seen lot of variations of ‘big mac in a bowl’ on Slimming World forums and wanted to create something similar- a tasty way to have a burger without the bun. I made these burgers mini just because they look prettier, but overall this was a really tasty and satisfying meal.

Ingredients

  • For the burgers:
  • 120 g lean beef mince
  • 1/2 tsp garlic powder
  • 1/2 tsp onion granules
  • 1 dessert spoon tomato puree
  • salt and pepper
  • handful fresh parsley
  • Other ingredients:
  • 2 rashers bacon (fat removed)
  • 30 g cheddar
  • 1/2 bag fresh salad
  • 1 red pepper (sliced)
  • 1 sweet potato (peeled and cut into fries)
  • a couple pinches cayenne pepper
  • low calorie cooking spray

Instructions

  1. To prep, preheat the oven to 180c and then mix the beef mince with the garlic powder, onion granules, tomato puree, parsley and salt and pepper. Shape the mixture into 3 mini burgers and set aside.
  2. Pop the sweet potato fries into a microwaveable bowl, cover with clingfilm (leave a small gap) and cook in the microwave for 3 minutes.
  3. Remove the sweet potato fries from the microwave and spray generously with low calorie cooking spray, season with salt and pepper and then sprinkle over the cayenne pepper.
  4. Place fries onto a chip mesh or non-stick baking tray (carefully-they are quite delicate after being microwaved!) and put into the oven. put on a 15 minute timer
  5. Cut each rasher of bacon into 3 pieces and fry along with your burgers. Keep an eye and keep turning them so they don’t stick to the pan. Cook for about 7 minutes. Set aside the bacon when browned.
  6. Pop the burgers on a baking tray (pre-sprayed with low calorie cooking spray), put the bacon on top and divide the cheese between the 3. Pop into the oven for 5 minutes to melt the cheese.
  7. Assemble the salad in the bowl, add the chopped red pepper and place the cheesy burgers on top. Serve the fries alongside.
