ITALIAN STYLE MOZZARELLA STUFFED BEEFBURGERS

I’m usually a bit boring (lazy) when it comes to making burgers, and I just shape mince into a burger shape and fry it. I wanted to have a go at making something a little bit more tasty, and I can never resist a melting middle in anything!

Please note that the portion of mozzarella in the middle of each burger is half of your HEA allowance for the day.

Ingredients

  • 400500 g extra lean beef mince (depends where you buy it!)
  • 1 egg
  • 1 tsp dijon mustard
  • 1 tsp worcestershire sauce
  • 1 tsp garlic salt
  • 1 tsp onion granules
  • 1 tsp dried chilli flakes (optional)
  • 1 tsp mixed herbs
  • 2 tbsp tomato puree
  • 1/3 cup cous cous
  • 150 g mozzarella
  • a handful chopped fresh parsley and basil (optional)

Instructions

  1. Make up the cous cous with boiling water
  2. Mix the beef with all of the other ingredients (apart from the mozzarella) and add the cous cous. Mix thoroughly.
  3. Divide the mixture into 2, and use the first half to make 6 burger shapes on a baking tray (pre-sprayed with frylight)
  4. Put 25g of mozzarella into the middle of each burger, and use the remaining beef mixture to cover the tops of the burgers, making sure that there are no spaces for the mozzarella to escape.
  5. Bake at 180c for 15-20 minutes until cooked through. You can grill the tops on a high setting if you want to brown the tops a bit more.

Notes

I served these with sweet potato fries and salad.
