GNOCCHI WITH BACON, PESTO AND GREEN BEANS
This meal is great for one of those nights when you pop into the supermarket desperately wanting a quick dinner without having something unhealthy! It’s just a few items which you can quickly grab, and it takes under 10 minutes to cook! (Gnocchi will be with the fresh pasta, usually around the ready meals!)
I used the Tesco gnocchi which is 2 syns per 100g, and Tesco pesto which is 2.5 syns per tbsp.

Ingredients
- 500 g gnocchi
- 4 rashers smoked back bacon fat removed
- 1 tbsp green pesto
- 200 g approx green beans
- 1 tsp red chilli flakes
- rocket salad optional
- low calorie cooking spray
Instructions
- Cut the bacon into small pieces, and fry in low calorie cooking spray until crispy
- Cook the gnocchi according to packet instructions, when there is 3 minutes of cooking time left, add the green beans into the pan with the gnocchi
- Drain the gnocchi and green beans, the stir in the bacon pieces, pesto and dried chilli
- Serve with rocket salad
Notes
Pine-nuts are also lovely fried in with the bacon- you can use these as Healthy extra B. Also lovely with parmesan on top if you haven’t used your healthy extra A.
