Gnocchi with bacon, pesto and green beans

A very tasty meal with quick to grab ingredients for a last minute weekday dinner

This meal is great for one of those nights when you pop into the supermarket desperately wanting a quick dinner without having something unhealthy! It’s just a few items which you can quickly grab, and it takes under 10 minutes to cook! (Gnocchi will be with the fresh pasta, usually around the ready meals!)

I used the Tesco gnocchi which is 2 syns per 100g, and Tesco pesto which is 2.5 syns per tbsp.

 

My Recipe

Serves: 4
Syns: 3 per portion

Ingredients

  • 500g gnocchi
  • 4 rashers smoked back bacon, fat removed
  • 1 tbsp green pesto
  • 200g (approx) green beans
  • 1 tsp red chilli flakes
  • rocket salad (optional)

Method

  1. Cut the bacon into small pieces, and fry in Frylight until crispy
  2. Cook the gnocchi according to packet instructions, and the green beans in a pan alongside them for about 3 minutes.
  3. Drain the gnocchi and green beans, add them together and stir in the bacon pieces, pesto and dried chilli
  4. Serve with rocket salad

Additional Info

Pine-nuts are also lovely fried in with the bacon- you can use these as Healthy extra B. Also lovely with parmesan on top if you haven't used your healthy extra A.
