COFFEE CUP WARM JAM SPONGE
I was sent some Jim Jams reduced sugar strawberry jam to try and so had a little experiment with a cake made in a coffee cup! It came out really well, so here it is!

Ingredients

- 1 tbsp milk (use from HEA allowance)
- 1/2 tbsp Flora Light
- 1 tbsp self raising flour
- 1 tsp baking powder
- 1 heaped tbsp powdered stevia sweetener
- 1/2 a beaten egg
- 1 tbsp reduced sugar strawberry jam
Instructions
- pop the milk and Flora Light into a little bowl and microwave for about 10 seconds to melt the Flora
- Stir in all of the other ingredients (apart from the jam) and beat with a fork to combine
- Place the jam at the bottom of a coffee cup (or small mug) and pour over the cake mixture
- Pop into the microwave on high for 1 minute. This should be long enough, but give it a quick poke to make sure it’s springy and not squishy, and if it isn’t quite done, give it 10 second bursts until it is.
- Turn out onto a plate and eat whilst warm!
