Lemony turmeric potato and chicken traybake
An easy traybake that’s bursting with flavour!
Syns: 1 per portion
bag Tesco Jersey Royal New Potatoes
3 large, or 4 smaller, diced into large chunks
deseeded and chopped
cut up roughly
zested and juiced
peeled and crushed or finely chopped
handful fresh coriander
salt & pepper
Pre-heat the oven to 180°C
In a small bowl, mix together the turmeric, cumin seeds, nigella seeds and lemon zest
Mix the lemon juice, garlic and olive oil into the spice mix
Chop the Tesco Jersey Royal New Potatoes into halves/thirds (depending on size) to create roughly even sized potato chunks
In a large mixing bowl, stir together the chopped potatoes, chicken chunks, onion, pepper and coriander
Stir through the lemony spice mix thoroughly, and then season with salt & pepper
Spread out evenly into a deep baking tray, and bake for 50 minutes, stirring halfway through cooking time
Serve up with green veg such as spinach, rocket, asparagus and green beans
This is beautiful with some mango chutney served on the side, and some hot sauce for any chilli fans!
