The best healthy baked onion bhajis
A deliciously healthy onion bhaji, using sweet potato to make a healthy and tasty batter
peeled and thinly sliced
small sweet potatoes
microwaved for 7 minutes
Low calorie cooking spray
I used Avocado Frylight
Preheat oven to 180c
Fry the thinly sliced onion gently for about 10 minutes, until nice and soft. Remove from the heat and allow to cool for a few minutes
Scoop the flesh out of the pre-cooked sweet potatoes, and mash with a fork.
Add the egg and spices and salt to the sweet potato, and use a form to combine thoroughly to make a batter
Stir the cooled, fried onions into the sweet potato batter until thoroughly coated
Line a baing tray with greaseproof paper, and use your hands to shape bhajis out of the mixture (I made 12 out of this mix)
Spray the bhajis thoroughly with cooking spray, and bake for 45 minutes until golden and crispy.
