Gnocchi with bacon, pesto and green beans
A very tasty meal with quick to grab ingredients for a last-minute weekday dinner
Syns: 3 per portion
rashers smoked back bacon
approx green beans
red chilli flakes
low calorie cooking spray
Cut the bacon into small pieces, and fry in low calorie cooking spray until crispy
Cook the gnocchi according to packet instructions, when there is 3 minutes of cooking time left, add the green beans into the pan with the gnocchi
Drain the gnocchi and green beans, the stir in the bacon pieces, pesto and dried chilli
Serve with rocket salad
Pine-nuts are also lovely fried in with the bacon- you can use these as Healthy extra B. Also lovely with parmesan on top if you haven't used your healthy extra A.
